Fritata



Doesn't this look yummy? I love the vibrant color of the veggies and eggs are my favorite breakfast food. Heck! I eat eggs for dinner. It is the perfect light meal. 

It is pretty simple... You need a little butter and whatever veggies you have on hand:
Onions
Peppers
Mushrooms
Asparagus
Cherry tomatoes (don't cook them too long)
Broccoli

First you saute the veggies in butter (start with the ones that take longer like onions and add the tomatoes right before you add the eggs). 
Whisk up some eggs and pour it evenly over the veggies in the pan. Let it cook until the eggs start to firm up. Then flip and let cook for a minute. 
Serve up with some cheese (optional) and salt and pepper. 

Sometimes I add ham, sausage or bacon if I have some left over. The amount you make depends on how many you are feeding.
